Smoked BBQ pork loin with sweet onions


1 cup wood chips for smoking (try maple or cherry)
1 tablespoon chili powder
1/8 teaspoon salt
1/4 teaspoon cumin powder
2-3 teaspoons of parsley
1 teaspoon of oregano
1-2 garlic cloves-minced
1 large sweet red onion sliced
1-1 1/2 pound pork tenderloin
1 cup olive oil

Combine chili powder, cumin, salt, garlic, parsley, and oregano in a bowl and mix well! Coat pork with olive oil and press spice mixture into pork. Heat grill with prepared smoking chips. Place tenderloin in a shallow pan along with smoke and cover. Cook for approximately 30-45 minutes or until meat thermometer reads 160 degrees. Place sweet onions sprinkled in olive oil on grill for the last 15-20 minutes of cooking. Slice pork tenderloin and serve with sweet onions. Enjoy this savory smoked meal fit for royalty.
